The RE1 remake has a lot more content than the original and significantly expanded gameplay as well. It entirely obviates the original (unless you're one of those weirdos who really likes bad acting and ugly graphics). The remake of Resident Evil 2 is, as you note, not a direct replacement of the original RE2.
